Ingredients:
- 4 cups shredded chicken
- 1 Tbsp EVOO
- 2 bell peppers, sliced
- 1 onion, sliced
- 8 oz cream cheese, softened
- 1 Tbsp homeamde taco seasoning
- 15 oz can diced tomatoes
- 1/2 cup water
- 2 cups cheddar cheese, shredded
Directions:
- Cook chicken in advance. I prefer the "perfect chicken" method in the crockpot. Shred chicken, I use the kitchen aid mixer.
- Preheat oven to 350 degrees. Prepare casserole dish by lighting spraying with EVOO
- In a large skillet over medium heat, add oil, onions, and peppers. Cook until softened
- Add shredded chicken, cream cheese, taco seasoning, water, tomatoes, and 1 cup of cheese. Stir until combined well.
- Transfer chicken mixture to casserole dish. Top with cheese.
- Bake for 25 minutes.
- Serve
