Chicken Fajita Casserole 

  • 4 cups shredded chicken
  • 1 Tbsp EVOO
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 8 oz cream cheese, softened
  • 1 Tbsp homeamde taco seasoning
  • 15 oz can diced tomatoes
  • 1/2 cup water
  • 2 cups cheddar cheese, shredded

  1. Cook chicken in advance. I prefer the "perfect chicken" method in the crockpot. Shred chicken, I use the kitchen aid mixer. 
  2. Preheat oven to 350 degrees. Prepare casserole dish by lighting spraying with EVOO
  3. In a large skillet over medium heat, add oil, onions, and peppers. Cook until softened
  4. Add shredded chicken, cream cheese, taco seasoning, water, tomatoes, and 1 cup of cheese. Stir until combined well. 
  5. Transfer chicken mixture to casserole dish. Top with cheese.
  6. Bake for 25 minutes. 
  7. Serve
