Ingredients:
- 1 Tbsp EVOO
- 1 lb Italian sweet sausage, remove the casing
- 3 celery stalks, diced
- 1 medium onion, diced
- 1 pepper diced (I did half red, half green)
- 1 Tbsp minced garlic
- 1 tsp red pepper flakes
- 1/4 cup tomato paste
- 2 medium zucchinis, cut into bite sized
- 2 cans diced tomatoes
- salt/pepper
- 2 quarts of low sodium chicken broth
- 1 cup grated Parmesan cheese
- 1 Tbsp basil
Directions:
- In a large pot, heat EVOO to medium heat. Add sausage meat and cook, while cooking break up, done when until no longer pink.
- Add onion, celery and peppers. cook for 4 - 5 minutes until softened
- Make space in the middle of the pan, add garlic, pepper flakes, and tomato paste. Cook for 2 minutes. Stir everything together.
- Stir in tomatoes, zucchini, salt/pepper. chicken broth, parmesan, and basil.
- Bring soup to a boil, then simmer for 15-20 minutes.
- Serve
