 Stove Top Chicken Alfredo with Broccoli

Ingredients:

  • 2 Tbsp EVOO
  • 1 lb boneless skinless chicken breasts, diced bite size pieces
  • salt/pper
  • 1 tsp garlic powder
  • 6 Tbsp butter
  • 2 Tbsp minced garlic
  • 2 Tbsp flour
  • 1 cup milk
  • 1 1/2 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 Tbsp Italian seasoning
  • salt/tpepper
  • 1 head of broccoli, diced
  • 8 oz pasta of your choice

Directions:

  1. Cook pasta according to direction on box.
  2. In a large skillet, over medium heat, drizzle EVOO.
  3. Add chicken and brown until cooked all the way through about 6 to 8 minutes. Remove chicken and set aside.
  4. Add butter to skillet. Once butter is melted add minced garlic. Cook for 30 seconds.
  5. Whisk flour until butter until flour is absorbed.
  6. Slowly pour milk and heavy cream while whisking to avoid clumping. Bring to a boil, then reduce to a simmer for 3-4 minutes until sauce thickens.
  7. Whisk in grated parmesan, Italian seasoning, and salt/pepper
  8. Stir in the cooked chicken, broccoli, and cooked pasta. Coating everything evenly.
  9. Serve
