Italian Meatball Soup

Ingredients:

  • 1 lb ground Italian chicken/turkey meatballs
  • 3 Tbsp EVOO
  • 1/2 medium onion, diced
  • 1 green pepper, diced
  • 2 Tbsp minced garlic
  • 2 cans Great Northern Beans
  • 3 cups spinach or spinach/ kale mix
  • 4 cups Fire and Kettle Chicken Bone Broth
  • 1 Tbsp Italian seasoning
  • salt/pepper


Directions:

  1. In a large pot, heat EVOO. Add onion, pepper, and garlic. Cook until veggies become soft.
  2. Rinse beans, then add to pot.
  3. Add bone broth, meatballs, spinach, and seasonings.
  4. Bring to a boil for 10 minutes. 
  5. Simmer for an additional 20 minutes, optional to enhance flavor.
  6. Serve
  7. Enjoy!!!!
