Not Just A Mom- What's for Lunch

Hey loves. Happy Monday. It is hard to believe that Easter is this coming weekend. We have our spring break next week too. I know a lot of other places had theirs in March or last week. I think ours is always the week after Easter. I am excited for the kids to be home for a week and to do something fun.

This month we are sharing What's For Lunch

I don't meal prep my lunches. I have tried meal prepping my lunches in advance and it didn't go well. I wasn't in the mood for what I made and got tired of it. Since I am home most of the time there is no need for me to meal prep lunches. Also the one week I tried I also made enough for Brian and he ended up having meetings all week and didn't take the lunches either. It didn't go as planned. 

My lunches are normally either leftovers, some sort of veggies with a protein or a salad. Here are some of my lunches the past month:


Leftover Spicy Creamy Chicken Soup


This is not a typical lunch for me. Brian was home and made lunch. Chicken salad with lettuce and tomato with a side of peppers. 


Trader Joes Red Pepper Roasted Tomato Soup and a grilled cheese


Broccoli slaw with shredded chicken and garlic expressions dressing


Leftover shrimp tacos


Salad with a hard boiled egg.


The past week I started the 4 week gut protocol to help improve my gut and determine what my food sensitivities could be. You eliminate some foods and add in others. The first week your veggies all have to be cooked also. Here are a few of my lunches from last week. 


Air fried carrots and green beans, black beans, berries, and almonds. 


Quinoa black bean blend, chicken, not pictured air fried veggies.


Quinoa black bean blend, air fried green beans, sweet potatoes, and red skin potatoes.

  5. Oh my gosh I love that Trader Joe's roasted red pepper and tomato soup. It is one of our all time favorites!
